Black ink on white paper is the most traditional and timeless application of letterpress printing.
This example shows a single color (black) ink on Crane Lettra Pearl White paper.
Instead of using colored ink, you may also consider using colored paper as a means to adding a spot color. This is Neenah Double Thick Blush paper.
1-color printing, or spot coloring, means that you use one photopolymer plate and a single color ink. Typically, black is used for 1-color prints, however you may also choose to have any mixed spot color ink, such as the burgundy color in the example above.
